Beats the heart of a chef in 2015 who doesn't dream of opening a taco shop?
Sylva Senat - awaiting the end of heavy construction that will yield him Maison 208, on the former site of Letto Deli at 13th and Chancellor Streets - is getting into the tortilla game, at least for a spell.
"I need a project," said Senat, a Brooklyn-born Haitian, who has been running a restaurant in Virginia after stints with Tashan and the former Saint James. Initially, he had considered starting a taco truck.
But after a chance conversation, he is working with Jimmy Tran on something more brick and mortar.
In April, Tran shut down Aqua Asian Bistro at 120 S. 15th St., a branch of his popular Thai/Malaysian restaurant at 705 Chestnut St.
The 15th Street spot is the luncheonette on the ground floor of the parking garage at 15th and Sansom Streets; it should be equipped with a revolving door based on the turnover - including Shank's, TG's, Enzo's, J.B. Pastrami's, and Philadelphia Steakout just in the last decade.
Plan is to open in early June with a small menu of rather chef-fy stuff.
Hours will be 11 a.m. to 9 p.m. daily, but till 3 a.m. Thursday, Friday, and Saturday.
